How’s about a little baking school update? I’m on a new team – there are four of us. We’re basically the Spice Girls. There have been some oven mitt hive-fives and baking success all round. In the past three weeks we’ve learned to make: pain au levain, pain rustique, pain pugliese, ciabatta, gluten-free baguettes and flatbread, gluten-free muffins and cakes, sweet dough, bagels, pretzels, english muffins and pizza dough. It has been epic fun. Next week, we hit the Station of Dread. I don’t know what happens over there but there have been tears and a LOT of cursing. Yikes.

I’m also learning all about spreadsheets and other computery stuff. So now I’m organizing my entire life into columns. We’ve started our small entrepreneurship class, which means we’re working on business plans and generally getting our creative on. And finally, our communications class will be focusing on human relations. Because the worst part about working with the public is the public.

Next, I would like to apologize for many years of wishing for snow days. It was very selfish – I realize this now. I have to leave my house before dawn every day, and I’ve had a few white-knuckle drives to school in the snow and ice. I basically weep the entire time. I love, love, love snow days, but colleges and universities don’t get them. I guess people only care about little kids. Huge mistake, as I don’t know very many of those little crappers who would bake you anything. Nothing I’d eat, anyway.

So, I offer up these cookies AS A REPLACEMENT FOR SNOW. Mrs. Rutherford made them for 2.0 at Christmastime. They were pretty awesome, so I asked her for the recipe. I’m going to give you the link below – I didn’t really change anything, but I’ve made some notes for you. The cookies are a nice, tender, vanilla-y cookie, dipped in a tart lemon glaze and then dipped in coconut. Easy, and pretty adorable on a plate.

Also, last week I walked into the men’s washroom at school. I thought I was walking into the dish pit. I was not.

Head on over to Sweet Potato Chronicles for the recipe – there’s a lot of cool stuff over there. When making the snowball cookies, I recommend breaking the butter and cream cheese up into small pieces when adding them to both the cookie dough and the glaze – it makes them easier to incorporate. I also found that I had a lot of glaze leftover, so you might consider halving the recipe. I didn’t use the full amount of coconut recommended either. I’d just put a nice pile in a dish and add more as required. Go forth and bake!

  2. You are totally awesome and I hope the Station of Dread isn’t too, er, dreadful? Everything you make always looks totally amazeballs and I hope you’re finding it epic learning new things every single day – I look so forward to your updates – I find them really reassuring!
    Oven Mitt high fives are the way forward. At this moment in time we’re all trying to find the most original ways to wear our white bonnets – whites are not as versatile as we might have hoped!
    I hope you are happy and well and haven’t eaten any creepy crawlies recently.

    • Guess what, Juls? The Station of Dread was awesome! So awesome, in fact, that we’re moving onto new stuff early. Today: danish pastry. I. Can’t. Wait.

      Yesterday, my chef instructor mashed my white hat into my head and then sprayed water in my face. Does that count as versatility?

  4. Yum. I’m trying these this week. We don’t get snow but once in a few years, so I’m one of those wishing-for-snow types who would cry if I had to drive to work in it. Instead, I will bake some cookies.

  5. You make cooking school seem so fun and adventurous! I love all of your stories. How were the gluten free items they had you bake? What types of flours did you experiment with?

  8. There’s something about those cookies that just makes me feel all happy. I think it’s the coconut, it looks so pretty! Wow, baking school sounds so intense. I’m in awe of what you’re doing! And good luck with the public; I’m sure if you toss any obstreperous bakery customers a snowball cookie they’ll settle right down!

  9. What you need to do is pick a university on a mountain. Like my alma mater, SFU. We got snow days a few times every winter semester…in Vancouver!! They shut the whole campus down. Boom. No school.

    Also…ciabatta. Freaking awesome.

  10. I hope that you were not only a Spice Girl but that you were assigned to be the one who’s married to Beckham because that chick has, like, a million Hermes handbags or something. I read it on the internet. I bet when she has a baking disaster in her kitchen she just marches outside with her $50,000 crocodile toe-leather bag or whatever, and buys herself a croissant at the Ritz.

    Just giving you an idea of how to cheer yourself up if the Station of Dread turns out to be terrible.

Ok, I have to admit you had me contemplating which spice girl I’d be – not as in “Sporty, Posh, Baby, etc.” (whom I will admit to impersonating in high school with 4 close friends of mine – there is unfortunate video evidence) but as in “Ginger, Cinnamon, Clove, etc.” And that got me to thinking WAY too much about which one I’d be and WHY and let’s just say that daydream ended with me baking spice cookies so I didn’t inadvertently offend any spices’ feelings for choosing another – I used them all. Looking forward to hearing about the Station of Dread – I’m surprised that’s not what they called the “Excel Spreadsheet Learning Station” 🙂

  12. If you mean that your baking group is like the Spice Girls following Ginger Spice’s departure, I’m not sure I want to know any more about it. They all got so very slutty and awkward at that point, even Sporty, who was mostly awkwardness personified. Sometimes she makes me shudder.

    You’d never guess from the above two sentences that I am the biggest Spice Girls fan in a 150-mile radius.

    Girl, Excel is easy. It does the thinking for you! Unlike interacting with the public… cheers! xo
